The message for 2022 is: 虎虎生威: Wishing you fullness of the vigor and vitality of the tiger. \nSpring rolls are a popular new year dish – they represent gold bars symbolizing wealth and are eaten around the world\, especially in regions south of the Yangtze River. \nYusheng/Lo Hei\, a prosperity salad\, started in the Chinese communities in Malaysia and Singapore. Once the dish is ready\, everyone joins in to toss the Yusheng/Lo Hei in the air with their chopsticks! \nCrispy Cantonese Pork Belly is enjoyed throughout Asia during the holidays but especially for the new year. Many Chinese restaurants and vendors offer the dish during this time\, often hanging the pork out near the window for people to see.   \nCLASS NOTES: The in-person class\, limited to 16\, will be held at the Catalina United Methodist Church kitchen\, 2700 E.
