Cost: $75.00 per person.    \nLong before farm-to-table was a trend\, for more than 30 years it’s been the guiding principle defining Chef Kristine Jensen’s cooking. This month’s class is local to the max with ingredients – from the salt and olive oil to the pork\, native corn\, amaranth greens\, dates and mesquite flour. \nHer menu honors Father Eusebio Francisco Kino (1645-1711) and the indigenous peoples who’ve called the Santa Cruz River Valley home for more than 4\,000 years: Native Sonoran Corn Sopes with Father Kino’s Native Tepary Beans\, Pork Belly and Nopalito Salsa; Date and Mesquite Flour Bars are dessert. The sopes will be fluffy\, moist and a great cushion to fill with tepary beans and pork belly. Delicious and brightly flavored\, the nopalito salsa is a perfect accent topping. Cost: $100.00 per person.    \nWestward Look Executive Chef Todd Sicolo and his wife\, Chef Tiffany Sicolo\, headline the May class. The menu blends heritage ingredients\, inspiration from Westward Look’s Chef’s Garden and 20 years of global culinary experiences\, including cooking for four U.S. presidents. \nCrispy Soft-Shell Crab with chile–lime cucumber noodles\, salted watermelon and fresh cilantro is the first course; next\, Horchata Salad – basil\, compressed cantaloupe\, fresh snipped cantaloupe sprouts\, local goat cheese and cinnamon candied macadamia nuts; Smoked Filet of Beef – lemon poached white asparagus\, shrimp scampi potatoes\, smoking rosemary sprig and toasted garlic butter reduction compose the entrée; Schnepf Farms Peach Pizza – Madeira poached white raisins\, salted caramel ice cream and peach bellini bubbles is the finale. \nThanks to the chefs’ generosity\, $25 of your registration fee will be donated to Youth on Their Own\, whose mission is supporting high school graduation and continued success of Pima County youth experiencing homelessness. \nCLASS NOTES: The in-person class\, limited to 16\, will be held at Antsy Nancy\, 5655 E. Cost: $100.00 per person. \nWho better than James Beard Award-winning Chef Janos Wilder\, credited with creating Southwest cuisine\, to inaugurate our Flavors of Tucson City of Gastronomy series? His James Beard Award in 2000 for Best Chef Southwest helped put Tucson’s culinary scene on the map. \nA driving force of gastronomic localism since the 1980s\, his cuisine is both ingredient and culturally-driven with native and local ingredients at the forefront.
