Named Best Dulceria by Tucson Weekly 2017-2020\, the real treat is eating the concha\, empanada and tricolor and ginger cookies. \nThe El Merendero building may have started out as an A&W restaurant in 1965 but when the Bohon family bought it in 1986\, the cuisine changed to authentic Mexican and seafood. Both are the stars with their cheese crisp and Chicharrones de Camarón\, crispy deep fried shrimp chicharrones accompanied by mayonnaise and salad. \nChef Mateo Otero\, a fifth generation Tucsonan and since 2017 owner of Rollies Mexican Patio\, calls the array of food he serves as Sonoran Chicano. Fresh off his five-week stint on Food Network’s “Best Baker in America” competition\, Loews Ventana Canyon Resort’s Executive Pastry Chef Aaron Manuyag will turn you into an expert and give us the scoop of being on the series. \nShowcasing its versatility\, you’ll learn the art of this egg-based dough\, how to tell when you achieve the perfect texture and confidently pipe cream puffs\, churros\, French cruller donuts and savory gougères. With Chef Aaron guiding you step-by step\, you’ll pipe\, make the cream and fill the puffs\, fry and dust churros in cinnamon sugar\, fry and hand dip crullers and pipe the gougères. There will be plenty for you to eat and take home.   \nPart of our Baking Fundamentals series\, this workshop is hands-on\, technique driven and more in-depth than our regular classes. Zoom cost: $40.00 per household. \nJust like a summer dinner Sicily\, an al fresco evening of deliciousness awaits as Chef Rocco DiGrazia of Rocco’s Little Chicago honors his roots under the Tucson stars at the beautiful Urban Grove. \nThe in-person class\, limited to 20\, has both chef demonstration and hands-on components; the portions are full size. You can be anywhere in the world to cook along with Chef Rocco live via Zoom. \nSummer Caponata Bruschetta\, bursting with eggplant\, vegetables and seasonings\, jam-packed with flavors sweet\, sour and salty is the appetizer. Busiate with Pesto Alla Trapanese is the pasta dish. Though tomatoes in pesto may sound crazy\, this is Sicily’s answer to Liguria’s more famous pesto. The two versions have fresh basil\, nuts\, garlic\, olive oil and Parmesan cheese in common. Ligurian pesto uses pine nuts\, Sicily’s uses almonds\, then adds juicy tomatoes on top for a uniquely delicious pesto. Chef Rocco amps his up with mint\, too. It’s served with Busiate pasta that’s perfect for catching all the little bits of pesto! \nGrilled swordfish stuffed with pine nuts\, golden raisins\, Romano cheese and breadcrumbs is the main course. Sicilians and Tucsonans share a love of foods made with prickly pear fruit. Prickly Pear (fichi d’india) and Lemon Granita\, a Sicilian ice dessert similar to sorbet\, is a winning flavor combination that’s as appealing to the eye as to the palate\, and the perfect way to end a summer meal. \nThis is our monthly class highlighting local dining at its best with Tucson Originals restaurants. In addition to fun and food\, there’s also philanthropy with 25% of your registration fee supporting GAP Ministries’ life-changing work. \nIn the hands-on class\, you’ll prep and cook with Chef John\, then enjoy the delicious three-course meal or cook along from your kitchen via Zoom. On the menu: Grilled Lemonade; Watermelon Gazpacho; Port Wine Poached Pear\, Green Valley Pecan Co. Candied Pecans\, Blue Cheese and Cucumber Summer Mix Salad with Pomegranate Vinaigrette; Rotisserie Chicken Quesadilla with Fried Guacamole and Churros with Dulce de Leche Dipping Sauce. \nThe GAP Kitchen reclaims highly perishable donated food – fruits\, vegetables\, meats – and makes meals for their group home foster children\, kids in low-income schools\, homebound elderly in partnership with Interfaith Community Services and others in need. More than 600 children in six schools are fed every week. Many bring home care packages to share with parents and siblings who otherwise would likely go hungry. In 2020\, almost 125\,000 meals were served. \nThe GAP Job Training Programs provide quality education to under-employed\, unemployed and in-need individuals. The free 10-week intensive programs are offered in Culinary Arts (400 hours of education led by Chef John) or Auto Tech. Expert sushi Chef Tommy Begay III\, will guide you step-by-step and share his secrets to making the seasoned rice that’s the foundation for deliciousness. Great sushi starts with the rice and the process to attaining that perfection takes sushi chefs a long time to master. Chef Tommy’s rice training lasted a year. \nOn the menu: Vegetable Rolls using nori seaweed sheets and the two sushi mats we’re giving you\, and Shrimp Nigiri\, an oval-shaped mound of rice with a boiled shrimp on top. Cost: $40.00 per household. \nWith the Children’s Museum Tucson\, let’s welcome in the Year of the Ox with Chef Devon Sanner in a fun cook along class with a free ingredients kit for the first 30 registrants to make two authentic dishes – Yu Sheng and Jiaozi. The message for 2021 is: Success will come to those who work hard. \nYu Sheng\, a prosperity salad\, started in the Chinese communities in Malaysia and Singapore. Once the dish is ready\, everyone joins in to toss the Yu Sheng with their chopsticks! \nJiaozi\, a Chinese dumpling you may know as potstickers\, is a must-eat New Year food. They symbolize longevity and wealth as their shape resembles gold shoe-shaped ingots\, an early form of Chinese currency. \nSince the class involves using heat\, pots/pans\, tools\, etc.\, adult supervision and involvement is necessary. Only you can determine the appropriate level of supervision and assistance your child needs. Our class for ages 8-12 assumes a mix of parent participation and close supervision. Please make sure your child wears an apron and closed toe shoes. If you’re over 12\, you’re welcome\, too! \nIf you’re among the first 30 to register\, you’ll receive an email letting you know.
