Sponsored by AARP\, the class is free. \nHealthy eating doesn’t have to be complicated or boring while enjoying a variety of foods from different food groups – fruits\, vegetables\, whole grains\, lean meats\, fish\, eggs\, nuts\, seeds\, legumes\, dairy products\, and healthy fats. \nIn this month’s Eat Well & Age Gracefully class\, sponsored by AARP\, you’ll cook a sumptuous Chinese vegan meal with Chef Barry Infuso. \nOn the menu: Stuffed Cabbage Rolls\, a traditional temple dish\, blanched cabbage leaves are stuffed with a savory mushroom filling then wrapped. Fragrant Dressed Tofu with Garlic and Basil is blanched tofu seasoned with fresh herbs; the preparation is minimal – the taste is sensational. \nKung Pao Mushrooms has the Sichuanese flavor profile combining a sweet\, hot\, and vinegary glaze with crisp golden peanuts and blistered dried red chiles; the heat is toned down to make the dish fragrant and filled with exotic Asian flavors. The dessert category doesn’t really exist in Chinese food\, but sweets still play an important role in Chinese food.
