Eat Well & Age Gracefully: Ratatouille

Healthy eating doesn’t have to be complicated or boring while enjoying a variety of foods from different food groups – fruits, vegetables, whole grains, lean meats, fish, eggs, nuts, seeds, legumes, dairy products, and healthy fats.
In this Eat Well & Age Gracefully series class, sponsored by AARP, Ratatouille is on Chef Barry Infuso’s menu.
Originating in France, the mélange of eggplant, zucchini, tomatoes, onions, garlic, and herbs cooked together in a rich tomato sauce, results in a healthy and nutritious dish low in calories, high in fiber, and full of vitamins and antioxidants. Serve it hot in winter, cold in summer, or purée for a pasta sauce.
CLASS NOTES: The class, limited to 16, will be held at the Catalina United Methodist Church kitchen, 2700 E. Speedway Blvd. You’ll receive an email with class details (everything you’ll need will be provided) 3 days in advance. Please use an email address you frequently check.
